Owner and Chef, Hope Ellard introduced herself and let us know that she has had her business in Knoxville for the last six years and been in the food industry for the last twenty years. In last nights presentation Hope discussed what your caterer will ask you, what you should ask them and what is popular at weddings.

Things you need to know before looking for a caterer, be yourself when meeting with the caterer:

Your budget, know your budget and be realistic. Take your budget and divide it by each person you expect to come to the reception. Is that dollar amount realistic? If your budget is not realistic, are you flexible, flexible about food choices and time of day? Are you inviting too many people with the budget you have?

How many guests will be there? With the economy where it is today, many brides and grooms are inviting family only.

How formal are you wanting your meal? Be honest with yourself, do you need the five coarse meal?

The above items the caterer will want to know, they will also want to know:

Your food style so they don't waist your time or their time talking about food you don't want or like.

How many guests will be attending, a general rule is that if guests are in town usually 75% of them will come to the reception.

Do you have any dietary concerns such as allergies, or limitations? The caterer can give you options.

Things you need to look for in a caterer:

Do your personalities work together so you feel comfortable communicating and so you know you will get what you want for your wedding.

Does the caterer serve the types of food you are wanting? Don't feel pressured into getting the wrong food choice.

Do they offer tastings? If they are proud of their product, they will share it and feed you, if not, move on.

Ask them how long they have been in business and how did they come about getting into catering?

Do they have a menu online?

Are their prices online? If the prices aren't listed, it is usually because they are pricey, which can seem scary.

Do they have references? Ask the references what the caterer's demeanor was, what did the staff look like, how was their food?

What are their fees, if any? Some charge 20% serving fee which covers staff, platter usage, linens, etc.

What is included in their price?

What kind of deposit is needed? Some require a flat fee, some a percentage. What is their payment schedule, what type of payment do they request?

Do they have a buffer in case more guests show up that didn't RSVP? Most do.

Is cleanup included in the price?

If the baker does not provide cutting of the cake, does the caterer and is there a fee? Does the caterer provide boxes for leftovers?

Make sure everything you require is in the contract and make sure your read the contract so you know what to expect.
If you feel like you found your caterer, ask how many weddings in a day they do, do they make sure that everyone they serve gets the same quality and service. If there are changes in the menu how much notice do they require and is there additional fees? Can they still stay in budget?

The most expensive meals at receptions are the plated five coarse meals where there are servers for each couple of tables and constant attention to your guests.

The most popular is the buffet line, you have less servers and guests can get what they want to eat.

Also popular is heavy horderves , look at the plate size to be covered, usually six to eight items would fill the plate. If you and your guests aren't vegetable people, don't get the vegetable platter. The vegetable platter is the most waisted item at receptions, a salad will usually replace it nicely. Make sure you take into account the season you are in regarding fruits, the fall and winter are not the best times to get chocolate covered strawberries, they are sour.

The hottest trend today is personalizing the reception. Making the reception about the bride and groom. Using stations are budget friendly and offer the favorite foods of the couple. Place cards at each station would talk about their first date, their favorite food, their favorite things to do, etc. Food at the Stations could include: A white bar could include white potatoes and sweet potatoes with all of the toppings; a Macaroni bar can have everything you can put in and do with macaroni and cheese; a Pasta station would have multiple choices of sauces and meats; a dessert bar would have several dessert choices which can include ice cream and all of the toppings, mini pies, cupcakes, etc. Some brides are offering just the dessert bar with their cake for an afternoon wedding.

The Grooms Cake is not just chocolate cake anymore, it is now whatever makes the groom happy, whether pie or cake, this is all about him.

For afternoon receptions Tea menu's are very southern and a lot cheaper than a sit down meal. They are still nice and filling. Tea Time is all about silver and elegance.

Hope's "niche" is fried chicken and southern food. She is from Mississippi and has a great personality.
After her presentation we got to sample the food we had been smelling since we walked in the door.
There were mini versions of the bars: Tea Time, with tasty cucumber sandwiches and turkey sandwiches, she also had a seafood dip and corn chips. There was also a slider and potato wedge bar. The sliders were cooked to perfection and the potato wedges were seasoned very well, all sorts of sauces, cheese and relish were there for you to personalize your slider. Finally the dessert bar: pecan pie and s'mores, along with a burning fire to toast the marshmallow and then dip into any topping you want...yum! the pecan pie wasn't too sweet and the crust was crisp, tasty and flaky, very good.
Next week, March 6th, Bride Camp it is all about the cake! Alicia from Cakes for All Occasions will be hosting the event. After in the room, they excitedly talked with many of the vendors available for them to talk to and see if the vendor would be a good fit for their wedding. All of the caterers brought out amazing food and the bakers brought out delicious cakes and cupcakes. Photographers, Videographers, Wedding Planners, Florists, Venues and Entertainment kept the hall beautifully decorated and lively. The brides were looking forward to the fashion show and the giveaways as well, especially the grand prizes.

Ron was the Master of Ceremonies for the event; he welcomed the brides and gave information about every vendor that was there, and hosted the fashion show. Every half an hour there were door prizes given away. The game show started off the events; there were five bride to be volunteers. Twenty questions were asked and these brides knew their stuff... there even had to be a tie breaker, great fun!The fashion show went off well, Bridal Fashions from Gilded Gown, Tuxedos from Savvi Formals, and Honeymoon fashions from Maurices. The guests loved the fashions and upbeat mood in the room. Following the fashion show was a mock wedding and finally the last of the door prizes and the grand prizes. One lucky bride won a free wedding, and another bride won $500.00.

This was a great event.

How to Pose for Wedding Pictures

Your hair and makeup are flawless, but your nerves? A little frazzled with that camera lens in your face. Heed these tips to guarantee great shots -- of you, your groom, and your friends.

For Your Portrait

Aim to Flatter
During formal pictures, "stand at a slight angle, not straight on," says Donna Newman, a photographer in Miami. And remember the basics: Take a deep breath, exhale, then tilt your chin down and look up. Also, people look slimmer when photographed from an elevated point, so ask your pro to hop up on a chair for some shots.

Bring a Friend
Have her stand off camera to carry on a conversation -- bonus if she's the funniest bridesmaid. "There's nothing more attractive than a sincere laugh," says Thayer Allyson Gowdy, a San Francisco-based photographer.

Hold the Bouquet with One Hand
Rather than clasping both hands around it, clutch it loosely with one and let the other hang naturally by your side. It'll look more relaxed.

Be Nervous -- It's Okay
Everyone's a bit jittery on the big day. Rather than forcing a smile the whole time, let yourself be real. "If I can catch the bride staring anxiously out the window or welling up with her mom, I know I've got a good one," says Gowdy. "Raw emotions make for gorgeous photos."

Just You Two

Ask for Some Alone Time
At the start of your session, have your photographer give you a few minutes while she discreetly shoots, paparazzi-style, from a distance. You're more likely to act natural without a third party right there, Gowdy explains.

Take a Walk
Hold hands and set off on a short stroll, even if it's just across the lawn. "The hair moves, the dress flows, and there's energy to the image," says Gowdy.

Kiss (Yes, Really)
It may feel cheesy at first, but it's your wedding -- go for it. "I joke and tell couples, 'Okay, you two, you can finally make out,' and they always laugh and have an awesome kiss," says Gowdy. "Let your guard down, and you'll get a beautiful image."

Use Props
And no, we don't mean moustaches. (It's official: They've jumped the shark!) Seek out items that are part of the scenery. If there's a statue outside your city venue, climb on. Getting hitched by a lake? Pose in a rowboat.

Your Wedding Party

Find a Backdrop
The ocean is always nice, but a wedding party lined up in front of funky hotel wallpaper or peeking out from the windows of a B&B is interesting, too.

Get Moving
As with the bride and groom, it helps to walk. Newman likes to have giggling flower girls and ring bearers chase the bride and bridesmaids while she shoots.

Use Furniture
Varying the height within a group can look much better than the standard lineup. If you have couches or vintage chairs set out for the reception, take a seat.

Make It Look Random
Max Wanger, a photographer in Los Angeles, often staggers people or asks everyone to look in a different direction. "Group shots are best when they're not so uniform," he says.

Catch the Guys Off Guard
Most men aren't exactly pro posers, so Wanger likes to capture them doing something -- like clinking glasses of Scotch or throwing a football.
http://www.marthastewartweddings.com/282951/how-pose-pro?xsc=eml_dwd_2012_02_23&om_rid=Nsj$11&om_mid=_BPRmmLB8d-$r64

Relay for Life Kickoff February 21, 2012

Last night we had a great time helping to kick off the 2012 Relay for Life. These ideas from Nadia Digilov of Celebrating in Style will show you how.

1) Know Your Guests. The first step to designing a reasonable quality budget is to know your people. What are their priorities? Are they primarily drinkers, eaters, or both? What is more important; a top-shelf bar or Surf and Turf? Your answer to this question will drive the rest of the decisions you make.

2) Make a Great First Impression. We've all heard the saying, "You never get a second chance to make a first impression." Set the tone with a well-dressed server greeting guests with champagne or signature cocktails. This will set the tone for the rest of the evening, as guests feel welcome and comfortable in their surroundings.

3) Cocktail Hour. If you are having a cocktail hour, consider having the servers hand pass the pricier items, and leave veggie and cheese platters out on tables. This will typically save an average of 30% of your catering budget.

4) Not All Seafood Is Priced Equally. Ask your caterer the specifics when making seafood selections. For instance, did you know that calamari are about half the price of shrimp?

5) Know Your Seasonal Foods. Some dining options are perfectly affordable during the summer season and are expensive in the fall and vice versa. Scarcity of a particular food will increase the cost by up to 40%.

6) Discount Options If you will have children at the reception, make sure that your caterer offers a discount for their meals. They eat less, and don't necessarily need "grown-up food." This will save tons of cash, especially if you have a huge family.

7) Mix It Up. Depending on the evaluation of your guests, consider a tasting menu that offers an array of mini courses instead of a hearty entree.

8) Mix Up the Alcohol Brands. Certain brands of vodka for example are pricier than others. If you're having a full bar, mix up expensive brands for guests that will inquire on brand and have your bartender use the less expensive brands for guests that do not have a preference. This little trick will save you about 30% on the cost of alcohol.

9) Close the Open Bar An Hour Earlier. Begin serving coffee and tea approximately one hour before you party will end. This will save you money, give closure to the party and give guests a chance to "sober up."

10) Forego the Over-the-Top Dessert Bar. People are generally happy with a good slice of cake or a cupcake, and maybe one other option.

Bride Camp February 7, 2012

The night started out with excited brides to be coming in to learn how to choose a photographer and videographer for their wedding.

Don Samples from Midnight Magic Studios started off the evening. He started off asking previous brides what they remembered about their wedding day. He asked what was the funniest thing at your wedding? One said, she didn't know it at the time, but in the pictures, you could tell she wasn't wearing a slip. Another previous bride said that she remembered how funny the car looked. Then Don asked if they remember their first dance, neither had dancing at their wedding. He asked if they knew what the groom and groomsmen were doing before the wedding; they didn't know. Did they remember who the bridesmaids were and if they were still in contact with them; the answer was yes. Neither had video to remember a lot of their weddings, and neither remembered everything. The pictures according to the previous brides, helped them remember some of the things, but not everything.

Don then explained that he was into film and not videography. He explained that film would almost look like a movie you would see without the bumps and blips that videography can have.

When choosing your videographer you need to follow the FCC- Find, Contact, and Communicate.

Find: When you go on the Internet, look at the demo clips, are they easy to watch, shaky, is the work years old or current, Do you get seasick watching the video? Listen to the audio, are the voices clear? Do they have a blog, if so do they offer advice or blog about themselves only?

Ask previous brides if they had a video, did they like who they worked with, were they easy to communicate with? Ask to watch their video (if they are excited to share their wedding video, they were happy with the service they received, if they don't care the service was disappointing).

When you go to bridal shows look at the booth from a distance, do you feel welcomed or is it cold and sterile? Is the staff happy to be there? Do they answer your questions or do they just try to push you to sign? If they are showing a video, can you see yourself as a part of that video? Do people around you enjoy the video? Ask other wedding vendors if they have worked with them and if they would recommend them or use the videographer for their own wedding? DO NOT USE CRAIGSLIST!!!

Contact: Make sure you choose between 3 or 4 to start. When you start communicating with them, the goal is to personally meet with them before you get into details of your wedding. There are only two questions to ask them initially: Are you available on my wedding day, (give date)? If no, then go to the next contact. Have you worked my venue? Every venue has rules and requirements, prior experience knows them, and some venues have an approved list.

At the face to face meeting, make sure you ask the videographer to bring a copy of the last wedding he/she did. If they make excuses as to why they "can't", move on, you don't want them. They need to be flexible with your schedule. Never ask for or accept a "Demo" video.

Communicate: Ask: How long have you been doing this, how long have you been in business, what type of education do you have, any prior video experience, what is your style of videography, do you pose or stage shots, how many weddings do you do in a day (if more than one, ask to meet with the videographer that would be doing your wedding or move on). Find out if they are using a one chip camera (usually ends up in a faded video, colors are not true) or a three chip camera (this is the one you want, true to color and very clear video). Ask what type of camera? The only answer you want to hear is Canon, Sony, or JVC. Ask who is going to edit your video, and if you can meet them. How long will it take to get my video back? If a week or two it is a red flag. The average is 8 to 12 weeks for a proper film. Ask what they will wear to the wedding, will the video come in a DVD case, or a jewel case (DVD case is much more professional and is easier to keep safe). If you want HD there is both positive and negative... HD shows everything, including the blemish you have covered up with make up, it is also really good about showing those wrinkles that we like to hide, so really think about if you really want HD. If using wireless mics what channel do they use (if it is 500, that is the emergency channel and if a firetruck goes by, the emergency comments could come up on the recording, even if you can't hear it at the ceremony...get someone else or have them change the channel). Ask them if they will be by themselves and how many cameras they will be using, the best scenario is 2 videographers with 3 cameras, one stationed in the back of the venue constantly filming so if something happens to one of the other cameras nothing is missed. Ask them for a copy of their liability insurance.

There are so many must have moments that the videographer needs to get, the number one is the look of the groom when he sees the bride for the first time that day. You want to choose a videographer whose time is unlimited for that day so he can be there from the start to the finish of your big day. The videographervideographer can do your "love story" this is a great tool to have at the rehearsal dinner, reception, or even better before the ceremony so those people there for your big day know your love story before the ceremony begins.

The biggest reason to choose a videographer is for the memories! Most brides never see themselves walk up the aisle, they never hear the vows (at the time they are so nervous they just repeat the vows but don't hear them) Most brides never see their first dance. This is the one and only time that both sides of the family are at the same time and same place. At the end of the wedding night, all that is left is the memories, and even they fade over time.

The average cost in the nation: new home- $240,100 (lasts 20 years or more), new car- $28,400 (lasts 7 to 9 years), wedding- $24,750 (lasts a few hours), a wedding film- $1,200 (lasts a lifetime).

Don archives on film, hard drive and gold disks in fireproof safes, so if your video gets destroyed, damaged, lost or stolen he will replace it at no charge. Your memory should last forever.

Then Terri Swaggerty from Terri Swaggerty Portraiture came up and talked for a little bit. She passed a few of her portfolios around so we could see her style. The best recommendation she had was to choose a photographer that you are comfortable with. Look at the photographers style, ask for references, do an engagement session to see how comfortable you are with them. Do you want high energy pictures with connectedness, look at their portfolios see if their style fits what you want for your wedding. Do you want your pictures to be more natural or posed?Make sure your shoes feel good, you will be in them at least 8 hours. Most importantly make sure your personalities click. To look slimmer, do not stand straight on, but a little to the side. Practice your expressions before your wedding day, be comfortable and have fun!

Finally Devon Murphy from Devon Murphy Photography came up. He talked about how you can get the most out of your photos. Get references was the most important point. Planning ahead is the most critical point you have. Both the bride and the photographer are responsible for the photos on the wedding day. The bride's part is to give the photographer the details such as the timeline. In giving the timeline make sure you take into consideration the time of year the wedding is, and the time of day. For example if it is an outdoor wedding at 1:00pm in July; you need to think of the wedding party and the guests comfort, it will be hot. Get as many pictures as possible done before the ceremony, that way the guests aren't waiting around too long after the wedding to head to the reception. Find out from other brides how long pictures took and make a realistic timeline.

The photographer is responsible for capturing all of the moments. It would be easier if you have the wedding planner and the photographer sit down together with you to help created the timeline. Remember, if everything is rushed, the photos will not always capture everything. Take crucial details into account. Make sure the photographer has a back up camera. Another way to make sure all of your details are captured, find out if the photographer and videographer have worked together before, if not make sure they have the information so they can work together at your wedding.

The next Bride Camp is February 21st "Beauty Inside and Out".
Call to make reservations: office: 865-769-5550

Bride Camp at 29:11 Event Planning Boutique February 7, 2012

This week's Bride Camp:

How to choose the right Photographer and Videographer for your wedding.

It is not too late to call today for reservations!
Office: 865-769-5550
Fax: 865-769-5548

Location
8078 Kingston Pike
Suite 119
Knoxville, TN 37919

Father and Daughter dance at Cokesbury Methodist

What a great event we had at Cokesbury Methodist Church in Knoxville. Ron was asked to start early and dancing started immediately; from Dancing with Cinderella, Girls wanting to have fun, to Butterfly Kisses... almost 600 fathers and daughters danced the night away. What an amazing blessing!

Girls were in beautiful sparkly dresses and fathers were in suits with ties, and even some of the fathers wore tuxedos for their little girls. There were even corsages and boutonnieres on the fathers and daughters.

There was a mother that was at the dance hosting the snacks and she told me a story about one of the girls that went to the Father and Daughter dance last year when Ron performed as well. The girl was at the dance with her father, they got their picture taken and danced, played games and had a great time. Apparently her father died... he won't be there when she graduates, gets married or have children of her own... but she will always have the memory of dancing with her father, where she was treated like the princess she is.

The mother told me that one of the reasons that the church hosts this event every year is for girls to see what type of man they should marry in the future and how they should be treated. There are so many little girls out there that don't have this opportunity. I thank God that there are churches out there that host such a memorable event for these fathers and daughters.

I am so proud that we were able to be a part of such a wonderful event.

Bride's Camp January, 31, 2012 Hosted by Mulberries Floral Design

I walked in and the smell of fresh flowers was in the air. 29:11 Event Planning Studios brought in Mulberries Floral Design for this week's session of Bride's Camp. Samantha Anderson from Mulberries brought in displays from simple country to elegant for us to look at. She has been designing floral arrangements for twelve years. The theme was Design Style and Budget, and what to expect when going to a floral consultation.

Samantha brought up that the style needs to match your theme and what you want as a bride.

A Country/Casual Style would contain natural elements such as cotton, colorful flowers with grasses and twigs used to bring the natural outdoor elements. The flowers could be sunflowers, iris, daisies, berries, etc. The containers that the flower arrangements could be in: mason jars, aluminum buckets, willow or wicker baskets, etc. This style can be used for outdoor venues, barns, or your own backyard.

A Traditional Style would be more elegant that the Country/Casual Style; mostly white flowers. Traditional flowers would be roses, hydrangea and lilies. Great for inside churches and chapels, or outside in a formal garden. Pastel to mid tone colored flowers have also been added to the arrangement.

The Modern Style would be in a wide range of colorful flowers, but would be used in a minimalistic matter similar to the Japanese Ikebana, for example an orchid is placed within a tall modern shaped clear container. Clustered flowers are also used to create a modern look.

Finally the Elegant Style with the use of silver, and glass. Clean lines, a simple color scheme and sometimes dramatic lighting. The Elegant affair can include votive, beautiful containers and things that sparkle. Nearly any flower type can be done elegantly.

Some ideas when decorating the ceremony or reception areas would be to remember that you do not have to have the same type of arrangements everywhere. Having arrangements in different eye levels can also help to make an area look more decorated than it really is... Also a note to remember- for a Valentine's wedding the flowers are usually double the normal cost because of "supply and demand". It is also more expensive for Mother's Day weddings, although not as drastic an expense as Valentine's Day.

The budget for the flowers would be from 8-12% of your wedding budget. In trying to stay in budget, the seasonal flowers will help your costs stay down. When a flower is in season, they are not usually as expensive when they are out of season.

Spring flowers would include: tulips, peonies, forsythia, lilies, lily of the valley (which is poisonous so do not have it put on the cake for decoration), hyacinths, and some more.

Summer flowers would have the largest array of flowers including: irises, delphiniums, gladioli, columbine, roses, chrysanthemums, and more.

Fall flowers would include: ranunculus, dahlias, calla lilies, gerberas, hypericum berries, and a few more.

Winter flowers would include: cymbidium orchids, amaryllis, ranunculus, gerberas, and a few more.

www.sierraflowerfinder.com can help you find seasonal flowers.

To help stay on budget, use "high dollar" flowers sparingly, such as dendrodian, orchids, etc. With most flowers, the season will have all the colors you want. Lilies are the only flower that the white lilies are in season longer than the colored ones.
Another budget friendly idea is to "recycle flowers". You can use the flowers from your ceremony for your reception as well; for example: have the wedding bouquets placed in a vase as a centerpiece for the reception. If you want to use vases, see if you can borrow them from friends or rent them rather than buying them if you don't want to keep them. Also after the wedding you can donate them to Random Acts of Flowers www.randomactsofflowers.org, a non profit organization that re-organize the flowers to give to sick and elderly as gifts at hospitals and nursing homes. They will take care of your flowers for free including pick up.

What to expect at your floral consultation. Again, to stay on budget, be upfront and honest with the designer about your budget. Samantha likes to look up the bride on pinterest before the appointment to see what the bride likes. The consultation can take an hour to an hour and a half. Make sure you only bring one to two people to the consultation so the designer can focus on what the bride wants. Bring pictures of things you like... the designer will also have pictures available of what they have done. Some questions you may want to ask: What flowers do they recommend considering the season for the wedding? Will they give you options of designs to stay within your budget? How much experience do they have? Have they been to the venue before (if not would they do an on-site visit free of charge)? Is there a delivery fee? What do you require to book our date with you? When is the balance due? Does the contract have provisions for any changes before the wedding? Do you have a minimum order? If you are ill, do you have a backup designer who can complete my wedding order? What is your cancellation policy?

To contact Mulberries you can reach them at: www.mulberriesdesign.com; office: 865-380-9130 and cell 865-617-4449.
Next week's Bride's Camp will be Photography and Videography. You need to take the selection process seriously.

You don't want ok service, or bad service to where your guests want to go home early. A good band or DJ will keep the celebration going all night! Good bands or DJs will be booked 8 to 14 months in advance.

In choosing a DJ

Make sure you meet with the DJ who will be performing for your event.

Make sure the DJ has the right personality and energy level for your event, and he is a Master of Ceremonies as well.

A good DJ will listen to your requests and have all the music you want at your event and be able to get requests on the spot at the event.

A good DJ will have up to date equipment, and will never have a break in the entertainment, even when he is away from his equipment to communicate with you or the planner.

Make sure your DJ is insured, this is his full time job and not just a hobby, he is experienced, and he is in communication with the vendors and the venue before the event.

Get references.

A professional DJ will be flexible with variety in the entertainment for your wedding reception as long as you hire a professional DJ. A professional DJ will cost you anywhere from $550 to $3000 depending on the size and times of your event.

In Choosing a Band:

Make sure you choose a venue with the right acoustics for live entertainment. Know the particular volume concerns of the venue as well.

The best idea in choosing a band would be to use an agency or ask your vendors about recommendations.

The cost depends on the number of musicians, anywhere from $1500 to $7500.

Make sure you know the needs of the band such as dressing rooms, meals, refreshments, etc.

Keep in mind that you may also need to hire a Master of Ceremonies for announcements at your wedding.

This is your wedding, or event. When you meet with a DJ or band, remember those things at weddings you have been to that you do not want, and those things you do want at your wedding or event and discuss it with them.

Alternative Guest Book Ideas

For a garden flair; Set out blank sheets of paper and floral clothespins so that guests could hang their sweet messages on a clothesline!

Your guests will be super impressed with a fun wooden guest book puzzle! The unattractive carpet or dingy walls will disappear with the right lighting and linens. What your guests will remember is sitting at your perfectly decorated, magically lit tables.

Enhance your décor with lighting
Everyone looks good in candlelight, so why not create a romantic setting using special tabletop lighting? Candlelight is an inexpensive way to visually take up space without going overboard on wedding decorations. (If you want the effect of candlelight without the flame, consider using flickering LED rechargeable votive batteries).

Be a Green Bride
If you are looking for ways to have an environmentally friendly wedding, consider using eco-friendly votive candles or rechargeable battery tabletop lamps. The lamps do not have to be plugged into an electrical outlet and the batteries are recyclable.

Share the Costs
Is your friend or sister getting married the same year as you? Do you share the same tastes? If so, consider pooling your resources together and purchasing wedding decor, tabletop or centerpiece items that you can both use. For instance, if you need centerpieces for buffet tables, consider choosing items that you can each use at your wedding. Mixing and matching and purchasing accent pieces can fill a room without anyone knowing you’ve shared in your décor. After the weddings, you can each take pieces home to incorporate into your lifestyle!

Save Money on Flowers By Using an Epergne
Your flowers are the focal point of your wedding decor, so why not show them off a little? Consider renting or purchasing epergnes, which are large table centerpieces with branching holders for flowers. Looking for ways to save and still make a impact? Check out these hot reception and catering trends that promise to "minimize" your financial investment and maximize everyone's enjoyment.

Reduce Seating
The latest trend is to move away from assigned seating and create a cocktail feel. Cut your tables in half and substitute high-tops or add a lounge area. You can still create a small (assigned) formal seating area for older guests and those with small children if you like, but encourage the rest of your guests to mix and mingle, move around, and generally table hop to ensure lots of mingling and socializing.

Go With a Tapas Menu
Chicken or fish? Forget about it! These days, lots of guests may be on special diets, have food allergies, or simply prefer to sample numerous things rather than being stuck with one option. A tapas menu is ideal because it let's you do just that without straining your budget. Opt for 10-15 dishes and space them out throughout the evening so everyone has a chance to try something without filling up on one item.

Offer Cocktail Flight Samples During the First Hour or Don’t Have a Bar
Worry about being stuck with one too many bottles of beer or wine? While you're getting your pictures snapped after the ceremony, have your serving staff prepare "flights" or small samples from your cocktail menu to try. Whether it's five microbrews, a trio of cocktails, or even a few different wine varieties, this allows your guests to taste-test each one and then settle of a specific beverage that they like. This should cut down on your costs (since most stores or outlets will let you return opened bottles or cases) AND make that post-wedding hour fly by for your friends as they learn more about each drink on the menu.

Cut Down on Wedding Cake
Not everyone likes wedding cake, so before you drop a bundle on a 6-tier confection, think about reducing the amount of cake you plan on ordering. A mini 2-tier cake is just as lovely, plus it frees up your budget to create a fun dessert bar or candy station. There's lots of options that exist when it comes to dessert, but also think about accompanying elements like a cool coffee station if you're serving traditional desserts. (If you feel like being creative AND a bit more interactive we think a mini "do-it-yourself" parfait station with granola and fresh fruit is great, as is a topping station for frozen yogurt.)

Come and join us on February 26th, 2012 at the "Foothills Bridal Extravaganza"
www.foothillsbridal.com
Also join us on March 10, 2012 for the Beaver Brook Bridal Show at the Beaver Brook Country Club.

My Thoughts

I have been asked why I don't charge as much for my services as some of my peers who state that if a DJ doesn't charge around $1200 he isn't worth hiring. When I used to live in Chicago, I had a good reputation and I was able to earn that price and more; because I have a passion to help people with their event. I am still fairly new here in the Great Smokey Mountains and I know I need to re-build my reputation. To me I need to prove to those around me, that I am worthy of my price. I work a minimum of 20 hours for an event before it even starts, from staying in touch with the person in charge of the event (wedding, etc), to gettting the song list, the itinerary and all of the details with the other vendors (timeline, etc)... I never just go to an event without pre-planning. If a person hires me, they need to know that I care about their event and I will give 100% no matter what. Just because I don't charge $1200 doesn't mean I don't do a great job... I do the best I can, with my over 20 years of experience... I do better than some of those $1200 DJs. I love being a DJ and Master of Ceremonies, My goal is to help events become better than what the original dream was. Some may DJ to live... I live to DJ!

The Shack in Kodak

Come see our DJ Ron Crivellone show his talent at the Shack in Kodak Friday night December 16th from 9pm to 12am!

5 Questions You Should Be Asking Your Vendors

Article From Get Married Magazine

Asking the right questions can lead to a big pay-off for brides and grooms looking to stay on budget.

First things first, have a plan of attack before you set up an exploratory appointment with a vendor. You will have a limited amount of time to meet with them, so it's important that you hit all the big questions first. Bring a binder to take notes and get a personal email address or phone number if you have any follow-up questions afterward. What should you make sure you absolutely cover during your initial meeting? Here's our top five topic suggestions:

1. What Do You Offer?
Now really, this may seem like an obvious no-brainer, but you'd be surprised to learn many vendors have affiliations or upgrades you may not find on their website. For example, your photographer may offer a free engagement shoot if you book a package with them, or your venue may offer a discount deal with a local cake vendor if you sign on the dotted line. Always make sure to ask about professional partnerships, free delivery, package deals and referral programs that may be available.

2. What Dates Are You Available?
Yes, many of you have your hearts set on a specific date, but really try to be flexible if you want to save some money. For example, let's say you're interested in a Saturday evening cocktail reception at some venue but the date you had in mind is already booked. Now, what if you had the option of having it on Friday evening for a lesser cost and another bride (who's having a Saturday morning wedding at the same spot) requested tents for her ceremony. Most likely, you can also secure the same tents (since it saves the venue time and money if they can put them up on Friday rather than rush to clean up after your event) for free, pay less, AND still have a killer event that doesn't bust your budget!

3. How Soon Do You Need a Deposit?
Today, tomorrow, a week from now -- who knows how long your entertainment/baker/florist will hold out before you get your check in to them. If you're planning a wedding during peak season (May though September), be prepared to come with cash in hand. Most vendors only have allotted number of spots they can handle, so don't be surprised if you wait and discover that they're already booked. Also, don't be afraid to ask about payment plan options. While not every vendor will be open to this proposition, some might welcome the opportunity to work with you (if you have a bunch of friends getting married and can refer them).

4. Are These Prices Set in Stone?
There's ALWAYS room for negotiation - especially if you're having a big wedding and planning on spending a considerable amount of money with one vendor. While you might not be able to whittle down the cost in every situation, you could get some added perks like free bouquets for your bridesmaids, a free cocktail hour or even the VIP suite for you and your groom at the hotel your out-of-town guests are staying at.

5. Can We Have a List of References?
Don't just go by the ones listed on a vendor's website -- ask for specific ones you can call on your own. Was the vendor helpful during your planning process? Did they call you back in a timely manner when you had questions? Did their offerings match what you requested? Were there any secret upcharges or fees they didn't make you aware of before you signed a contract? All of this information should be gathered prior to booking anything or putting down a deposit. And, if you run into a vendor who isn't willing to share his or her references until you DO sign a contract, run for the hills. However, there are a few costs that often sneak up on couples and can easily blow a budget (eek!) if not planned for properly. Take a look at these five often overlooked wedding expenses to avoid any surprises!

1. Postage: An inevitable expense, the cost of postage is important to keep in the back of your mind as you shop for those beautiful invitations that can include multiple cards, carrier envelopes and even presentation boxes. Avoid sticker shock by compiling one complete invitation, including any enclosures, and taking it down to your local post office to have it weighed before making your final invitation purchase. (You might start rethinking those adorable presentation boxes after you calculate your total cost!) You should also ask the post office about any upcoming postage increases as you may need to buy the Forever Stamp, which is good no matter how many increases are made through the U.S. Postal Service.

2. Tips: You will quickly learn on the big day that there are a number of service providers that would appreciate a tip from you. Before you sign any vendor contracts, make sure they specify whether or not gratuity is included. For example, many catering companies include tips to be divided among the workers, but be prepared to pay 15 to 20 percent (just like eating at a nice restaurant!) of the catering bill if it’s not included. And don’t forget to bring a little extra cash for your limo driver and entertainment!

3. Delivery and Setup: This may seem like a no-brainer, but many couples don’t realize how quickly floral, linen and any other rental service’s delivery and setup fees can add up. Discuss these costs with each rental company before signing any contracts. You can also try to save a buck or two by asking friends and family members to lend a hand. Perhaps your aunt has a few extra minutes to go pick up the linens or, if you have a planner, they will most likely be happy to arrange your flowers!

4. Cake Cutting and Corkage Fees: If you’re bringing in a cake from an outside baker, expect to pay anywhere from $1 to $3 per slice. Want to cut the cost? Consider serving cupcakes or cake pops! They’re easier to transport from the bakery, available in a wide variety of flavors and are super cute!

Thinking about bringing your own alcohol? Be prepared to pay a corkage fee of $10 to $25 bottle. Alcohol is lucrative for venues, and this is their way of deterring you from bringing it in from outside.

5. Favors: Spending $3 per wedding favor for your 150 guests won’t seem like a big deal until you tally up the cost and realize that you’re spending almost $500! Be sure to consider all of your options when it comes to saying “thank you” to your guests. Do it yourself gifts or place cards that double as favors can really save on cost in this department.

-- Marianne O. Rather than having a reply card, ask guests to reply online, by the telephone, or use a reply postcard (postcard stamps are only 29 cents instead of the 44 cents for each envelope mailed). Not only will you save money from the printer bill, it should also reduce your postage expense. You can also print your own invitations to save money as well. There are invitaion kits available on several websites and party planning stores.

Tomorrow running sound and playing music for a kickboxing tournament in kodak for the fit factory.

Getting ready for a busy weekend of apts with clients and dj work
